I come from a long line of ladies who cook. My Grandma C. was unbelievable, she taught my mother and having them around, I just did the basic's. With Grandma's passing and my mother not interested in cooking anymore, HERE I go ! Let's cook together.

Corn Salsa


It's Corn Salsa time of the Year !

4 ears of fresh corn, cooked and remove from cob

Lime juice - fresh if you can, or the green lime at the store 2-3 Tablespoons

1 Large RED onion
2-3 GREEN onions
Fresh Cilantro 4-6 Tablespoons
Olive Oil - 2-3 Tablespoons
1 teaspoon cunim
Salt to taste
Black Pepper to taste
1-2 finely chopped jalapeno peppers


Mix together, Fridge for a bit and serve with bag chips

Banana Bread

I always seem to have a couple of banana's left on the counter.

This is a recipe from allrecipes.com and I've used it for years.
Submitted by: Pat Heldenbrand and I've only changed it a bit.

2 Cups all-purpose flour
1/2 teaspoon baking soda
1 cup white sugar
1 egg
5 Tablespoons Greek yogurt or plain yogurt
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup soft margarine
1 cup mashed bananas
 1 teaspoon cinnamon
1/2 teaspoon nutmeg

Stir, flour, baking soda, baking powder, salt, cinnamon, nutmeg together.


Cream sugar, margarine, mix in egg, banana and yogurt, add dry ingredients.

Spread into one greased and floured 9" x 5' loaf pan ,
Sprinkle with a 1 Tablespoon of white sugar.

Bake at 350 degrees F for 1 hour.

Seven Layer Salad

Nothing takes me home more than
7 -  Layer Salad
At our house we call it 7-Layer BUT, it may have more or less layers.

One 9" x 13" glass dish
Layer everything into the dish in order as written
1 large head of iceberg lettuce
1 red onion chopped
1 green pepper
1 cup fresh corn off the cob or one small can whole kernel
3 stalks for Celery thinly sliced
1 cup carrots, I like them grated or slice thin
1 bunch green onions sliced
Fry 5 strips of bacon until crisp, crumble into pieces
Mix together
1 Cup Mayonnaise Lite
2 teaspoons sugar
Spread evenly over the  top of salad
1Cup Shredded Cheddar Cheese, add on top
Add crumbled bacon
Cover and refrigerate for 24 hours.

Slice and Serve

Baked Beans on the Grill

 Quick easy and GOOD !

This is my Aunt Georgie's recipe

2 cans -  15 oz. Van Camp Pork & Beans
1/2 cup chopped onion
1/2 cup brown sugar
3 Tablespoons Ketchup
1 teaspoon Pepper

Spray inside of bowl with vegetable spray
Mix all in a bowl safe for the grill. 

I line the OUTSIDE of the bowl with foil, easy clean up

One grill 350 to 400 F for 1 hour.

Taco Salad Tonight

This is one of my favorites.

Taco Salad



1 to 1 1/2 lbs, ground hamburger
1 can Refried Beans
1 envelope of Taco Seasoning
1 bag taco chip
Salt and Pepper to taste



Brown the hamburger, salt and pepper and drain. Add the beans and seasoning. I mix mine into very small pieces, one son didn't like beans and he NEVER knew they had been added.

(For company, I double amounts of everything and this is when I'd put the meat into a crockpot. Let it cool and then into the Refrig, will take about 3 hours on low to warm, watch and stir as needed. Cut and chop everything and you can enjoy the event too !) 


Serve with everything you like,
Taco sauce, or salsa
Onions chopped
Lettuce
Tomato
Black Olives
Sour Cream or Greek Yogurt
Anything and everything you like !

Pesto and alittle Salad

 Pesto Chicken



8 oz. of Linguine
2 Cups Cooked Chicken

4-5 Tablespoon Pesto
Sprinkle of Parmesan Cheese

Cook Linguine as directed on box

Drain, add Pesto and Chicken stir and warm



 Sprinkle with Parmesan cheese and serve



Wednesday

Potato and Carrots on the Grill

 Grill Potatoes and Carrots

 


3-4 Potatoes pealed and sliced

15-20 Baby Carrots

1/2 of a Medium Onion Sliced.

Salt and Pepper to taste.

3-4 teaspoons Margarine or butter

Turn gas grill on high or 400 F

Heavy foil, spray with olive oil

Fold over and close both ends

Place on rack turn after 30 minutes

Total cooking time 1 hour.



Great side to any meal

Quick Quilt Supper

 Quick Quilt Supper

Growing up this was called "Dirty Rice" it's rice and everything left in the frig.

I've been getting the books into Kindle, but lost all track of time !


One package of rice 5.3 oz., any flavor you like.
Make as stated on package, I do the microwave way.

As rice cooks


1/2 Cup Onions slices
1/2 Cup Green Onions chopped
3-4 Carrots chopped
1/4 to 1/2 lb. Ham sliced into bite sizes
Olive oil

Cook until tender in a fry pan.

When tender add rice, mix and serve

 

Served with Cottage Cheese and apples
Serves 2-4

Quick Biscuits

Garlic Biscuits




Garlic Biscuits

2 cups Bisquick® mix
2/3 cup milk
½ cup shredded Cheddar cheese (2 ounces)


Heat oven to 450ºF.
Stir Bisquick mix, milk and cheese until soft dough forms. Drop dough by 9 spoonfuls onto ungreased cookie sheet.


Bake 8 to 10 minutes or until golden brown.




2 tablespoons butter or margarine
¼ teaspoon garlic powder (I use a bit more)

Stir together butter and garlic powder; brush over warm biscuits.

Chicken Enchildas

This is always in my rotation of meals.


Super Enchiladas

I usually make this dish first thing in the morning, don't bake, cover put in Frig.  Pull out and bake, ready to eat in 30-35 minutes




2 Cups Cooked Chicken
1 8 oz. Cream Cheese softened
1 Cup 8oz. Sour Cream
1 Cup Salsa, (I use hot) use what you like

8 Flour Tortillas 8inches
2 Cups Shredded Cheddar Cheese

1 Can 2.5 Sliced Black Olives drained
Cut up Tomatoes and Shredded Lettuce

Combine Chicken and Cream Cheese in a bowl
Spoon ¼ Cup of mixture into the center of each tortillas
Lay Seam down in a greased 9” x 13” pan

Mix Sour Cream, salsa and spread over the top of the tortillas

Bake at 350 F for 20 minutes uncovered

Sprinkle with Cheese and Olives
Bake for 10-15 minutes more

Serve with Lettuce and Tomatoes

4 Servings with Chips and Salsa

Fried Apples

 I miss my Grandma C very much, my mother worked when I was growing up and after my sister married, Grandma C moved back in with us and took my younger brother and I under her wing.  She did everything with food, when I miss her I cook.

Grandma's Fried Apples

Cut and core 4-5 of the firmest apples you can find. 
These are red delicious.

In the pan add 2 big Tablespoons of butter or margarine, let it melt a bit add apples
 1/2 cup brown sugar
1 Tablespoon Cinnamon
1 Teaspoon ground nutmeg.

I measure nothing in this recipe, just add !


Cook at medium heat until apples are tender. Stir

Serve as they are, as a side, or add over cake or ice cream.
I use it as a side, I am HOME
