I come from a long line of ladies who cook. My Grandma C. was unbelievable, she taught my mother and having them around, I just did the basic's. With Grandma's passing and my mother not interested in cooking anymore, HERE I go ! Let's cook together.

Hamburger Pie

 To me this dish is home.
Long ago it would have been made with homemade mashed potatoes on top.

But, not anymore, I'm trying to get my waist back.

1 1/2 lb. Lean Hamburger,
1 medium onion, chopped
Brown, Cook and ground, drain any fat off.

Add
1 can tomato soup,
1  can whole kernel corn
1 can french green beans


Mix well, add
2 teaspoons garlic powder,
1 teaspoon chili powder
Salt and Pepper


Spray with vegetable oil a round 9" baking dish.



Top with 10 ground up saltine crackers, I use wheat crackers.
Or if you like top with mashed pototoes !

Bake for 30 minutes at 350 F



Served with corn bread and fresh peaches.

Wednesday

Walleye on the Grill

 Husband is a fisherman and this is one of my favorite ways to fix fish, and easy.

3 slices of a solid white fish, I used walleye
cleaned, and boned, cut into smaller pieces



In a bowl, 
Salt and Pepper
2 tsp Olive Oil
2 Tablespoons Lemon juice, I like fresh

Mix well.

Heat your grill to 350 to 400 F.




On a cookie sheet with foil on it, sprayed with vegetable oil.


Cook on one side about 5-6 minutes, turn and watch 4-5 minutes



Served with a fresh salad, and baked beans.

Spinach Garlic Noodles

 We have a wonderful Farmer Market here in our area and I found these great Pasta's.

They have a site and recipes - HERE
Dakota Earth.

I used this as a side, very simple.
They are the spinach garlic noodle.

Boiled in water and a bit of garlic powder 1/2 tsp to 1 tsp.


 Boil and drain


Add back into the pan, add 2 tsp of margarine or butter,

Add fresh Parmesan cheese to taste.

Warm and serve

You can do this with any good pasta, served with grill chicken breast.

Thursday

Onion Marmalade Hamburger

1 teaspoon olive oil

1 red onion sliced thin
2 white onions sliced thin
Cook until the onions are soft.

Put heat down and let cook.

1/4 cup sugar
1 Cup red wine
Salt and pepper to taste



Add to onions and let simmer until the liquid becomes like a syrup.

1 lbs lean hamburger made into 4 patties, grilled or fried.
4 wheat buns.


 
Served with ketchup, mustard and fresh fruit.



Goulash with Ground Beef

A Meal in One Bowl

1 small onion, slice and added to  
1 pound Hamburger, browned and drained.

1 8 oz. package elbow macironi cooked

1 can Hunts Spaghetti sauce

1 small can whole kernal corn.

Add everything to Hamburger, mix.

Add 1/2 cup ketchup
1 teaspoon garlic
2 teaspoon sugar.


Warm and serve
The best lunch of the next day too !

Pineapple Upside Down Cake

Quick, make and bake dessert.


1 can crushed Pineapple, juice drained.
10-12 marchino cherries, cut in half, no juice

In a 9 inch round cake pan, spray with vegetable spray.


Spread pineapple and cherries in the bottom of the pan.




1 box of Yellow cake mix,  small box.  9 oz.
Make and bake as shown on box.




Let cool for 5 minutes and turn upside down.




 

Served here with vanilla ice cream.

Onion Hamburgers

 We love hamburgers on the grill and this is one of our favorites.

I large onion sliced thin

1 pound hamburger
Salt and pepper to taste




Saute onions in olive oil until tender.




Divide hamburger into four patties, flatten the pattie out and add a 1/4 of the onions to one side.




Fold other side over, and pinch to close, do with all four.

Salt and Pepper to taste,
Grill on hot grill until done.


Serve as you like !

Fish Taco's

When Husband bring home a recipe from work.....

Well, after he talked it up, way too much.

I tried it.

1/2 Cup Greek Yogurt
1/2 cup light Mayonnaise
1/4 cup chopped Fress cilantro
1 oz package of taco seasoning mix
1 pound Tilapia, or other firm fish cut in chucks
2 Tbs. olive oil
2 Tbs. of lemon juice, bottle or fresh
1 package whole grain taco shells.

Mix together, sour cream, mayonnaise, cilantro and 1 1/2 tablespoons for the seasoning in a small bowl.

Combine tilapia, olive oil, lemon juice and rest of seasoning mix,
Coat fish with seasoning
 Cook, stir over medium heat for 4 to 5 minutes per side. or until fish flakes with fork.


Fill taco shells with fish mixture,

Top with, lettuce, tomatoes, sour cream mixture


Or as I like it. Salad, chips and fish.

Bruschetta from my Garden

 Bruschetta is great at this time of year with everything being so fresh.

This is great on a weekend afternoon, as you are sitting on the porch with a cold drink.

4 Large firm tomatoes, chopped finely
1/3 cup green onions chopped
1/3 cup white onions chopped
2 Tablespoons minced Garlic
1 Cup Fresh corn off the cob
 Fresh basil
Salt and Pepper to taste

Mix all together, cover and chilled for 1 hour

1 loaf French baguette



Cut bread into 1/2 inch sliced and lightly butter each side, place on a cooking sheet,
Broil each side until golden brown.

Spoon in Tomatoes, Serve

Baked Apples on the Grill


Baked Apples on the Grill

We use our Gas Grill all year long, no matter how cold it is out we use it.
I love it and do as much as I can with it.

Large piece of heavy foil.

Spray with Vegetable stray.

Wash and core 4 Apples, cut and slice,

Put in the center of the foil



Add on top of apples
2 Tablespoons brown sugar
1/2 cup raisins
2 - 3 teaspoon of margarine

2 Tablespoons Cinnamon




Fold foil together and much sure the ends are secure.

Grill on 350 to 400 place on top rack,
Bake for 1 hour, Turn at half was mark


Serve as is, over ice cream or white cake.

Chicken Fried Steak

 Grandma C's Chicken Fried Steak

Serving for 2

2 boneless, skinless chicken breast

Place each in between wax paper
and with the side of the hammer, pound.



Make it about double the size of the original chicken breast.



One egg with 1 Tablespoons water, beat lightly

About 20 saltine crackers crushed,

Add olive oil to a fry pan and warm, add chicken,



Cook until a golden brown and chicken is done,

Served on large wheat buns with tomato, lettuce, onion and mayonnaise

Grill Pizza

Grilled Pizza

 This is so fun and easy to serve with alot around.

2 packages of Pizza Crust mix I use our store brand.

Make as directed on package.

Spread out each crush on a grill cookie sheet. sprayed with vegetable oil.

Cook on grill at 350 for 10 minutes NO TOPPINGS on.
Do this early,


Time to eat, Add you favorite toppings,   if guests, chop things up and let them add.

Put back on hot grill 350- 400 and cook for about 15-20 minutes watch and get the cheese just right.



Cut and serve the crust is wonderful !

Chicken Alfredo


Chicken Alfredo

8 oz. Linguine
Cook Linguine as directed on package

As this is cooking grill 2 chicken breasts


Drain noodles and add,

10 ¾ can Cream of Mushroom soup, (I use lite)
½ Cup Milk (I use skim)
½ Cup Grated Parmesan Cheese
½ teaspoon Pepper
1 to 1/2 cups Fresh Spinach, washed and chopped.

Stir and warm


Spoon mix in center of plate and added cut chicken breast to center or side.

Banana Muffins


Need something for a breakfast coffee,


Banana Muffins

1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3 bananas, mashed
3/4 cup white sugar
1 egg, lightly beaten
1/3 cup butter, melted
1/3 cup packed brown sugar
2 tablespoons all-purpose flour
1/8 teaspoon ground cinnamon
1 tablespoon butter
Preheat oven to 375 degrees F  Lightly grease 10 muffin cups, or line with muffin papers.
 In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt. In another bowl, beat together bananas, sugar, egg and melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.

In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon. Cut in 1 tablespoon butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins.

I left this step off



Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.
