I come from a long line of ladies who cook. My Grandma C. was unbelievable, she taught my mother and having them around, I just did the basic's. With Grandma's passing and my mother not interested in cooking anymore, HERE I go ! Let's cook together.

Banana Muffins


Need something for a breakfast coffee,


Banana Muffins

1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3 bananas, mashed
3/4 cup white sugar
1 egg, lightly beaten
1/3 cup butter, melted
1/3 cup packed brown sugar
2 tablespoons all-purpose flour
1/8 teaspoon ground cinnamon
1 tablespoon butter
Preheat oven to 375 degrees F  Lightly grease 10 muffin cups, or line with muffin papers.
 In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt. In another bowl, beat together bananas, sugar, egg and melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.

In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon. Cut in 1 tablespoon butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins.

I left this step off



Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.

Grandma's Fried Corn

 Sweet Corn is WONDERFUL this year and we are having lots of it.

Fried Corn



Cook 6 ears of corn and remove from the cob

Melt 2 tablespoon of margarine in fry pan

When melted add 2 Tablespoons of White Sugar mix,



Add Corn

Stir and Watch

We like it with just a bit of crunch, the longer you cook the more crunch.




Served with Chicken Enchildas   HERE  as a side

Had corn the next afternoon for lunch.

It you like you can add,
chopped peppers, red or green, both
chopped onions, white or green
cooked shredded meat and make it a one dish supper.

Corn Bread with a bit More

 I hope you know about "Jiffy" corn muffin mix.

Growing up it was a staple in our house.


Make the mix as stated on the box.

Add one cob of cooking fresh corn, cut off.




2 Tablespoons of green onions,
Mix well.

Pour into baking pan, Sprinkle with a bit of white sugar on top.

Bake per directions on box




Serve out of the oven hot.

Stepped Up A Grilled Cheese

 Grilled cheese is not one of my favorite things.

I've tried here to step it up and make it better.



Cut 4 slices of a good French bread, slices about a 1/4 inche

Butter on side of each slice.

Place 2 of them butter side down in a fry pan.



Place a slice of good colby jack cheese, a couple of slices of deli roast beef. thin slice of onion and a bit of mustard and another slice of cheese, Add other slice of bread, butter side up.

Brown of first side and turn to other side.
 

Husband really liked,  served with Chicken and Noodle soup.

Brownie Classic

 You know when you pull out the Hershey Cocoa, the recipe is going to be perfect.
HERE'S  their website

1 cup (2 sticks) butter or margarine (Use butter)
2 cups sugar
2 teaspoons vanilla extract
4 eggs
¾ cup HERSHEY’S Cocoa or HERSHEY’S SPECIAL DARK Cocoa
1 cup all-purpose flour
½ teaspoon baking powder
¼ teaspoon salt
1 cup chopped nuts (optional)

 
Heat oven to 350°F. Grease 13x9x2-inch baking pan. 
 Place butter in large microwave-safe bowl. Microwave at MEDIUM (50%) 2 to 2-1/2 minutes or until melted. Stir in sugar and vanilla. Add eggs, one at a time, beating well with spoon after each addition. Add cocoa; beat until well blended. Add flour, baking powder and salt; beat well. Stir in nuts, if desired. Pour batter into prepared pan.
 Bake 30 to 35 minutes or until brownies begin to pull away from sides of pan. Cool completely in pan on wire rack. Frost if desired. Cut into bars. About 36 brownies.


 

CHOCOLATE FUDGE FROSTING
1/3 cup butter or margarine
2/3 cup HERSHEY'S Cocoa
2-2/3 cups powdered sugar
1/3 cup milk
1 teaspoon vanilla extract
Melt butter in small saucepan over low heat; add cocoa, stirring constantly until smooth.(Mixture will be very thick.) Remove from heat; pour into medium bowl. Cool slightly.
Add powdered sugar alternately with milk and vanilla, beating to spreading consistency. About 2 cups frosting.

Cutting Corn

 I had a couch morning the other day and the food network was going. I saw Guy Fieri and he showed how to cut corn off the cob.

I've cut the corn off the cob for Husband and then family my whole married life. I'd just put it time the middle of a plate and start cutting and corn went every place !



Well, this worked and I loved not having to do a counter clean up.

Quick Salad Lunch

 I like a salad for Lunch when Husband is home for the day.

I chop early and  Refrigerate for later




Lettuce, any type you like for 2
1/2 cup green peppers
Medium tomato
Celery chopped
Carrots chopped

2 cups cooked Chicken Shredded
Place lettuce in the bottom of a  bowl and
 
arrange everything else on top.  Serve with your favorite dressing and ice tea.

Sunday

Pork Cutlets

 This is a food from my past and I haven't done them in years and years !



I had to ask for them and then make another trip back to the store to get them.

I did one package about a pound to a pound and a half.

I washed and removed some of the fat.

1 cup of white flour, salt and pepper on a plate,

1 egg beaten with 2 tablespoons water.

Heat, Olive oil in a skillet on the stove.

Dig cutlet into the egg and then flour, put into the oil.

Cook each cutlet 8 to 10 minutes, drain on paper towel.



Husband was over the moon with this meat, me...... it wasn't like Grandma's, but I really think it was because it wasn't cooked in good old, Criso Shortening !

Cheese Potato's

 Cheese Potato's
Everyone does these and this is the way I do them.

1 large package of frozen hash browns
1 can Campbell's Cheddar cheese soup
1 can Campbell's Broccoli and cheese soup

1 Cup Milk
1 Cup Shredded cheddar Cheese

9" x 13' pan
Mix all ingredients,
Top with the Cheddar Cheese

Bake at 350 F. for 1 hour.

Tuesday

BBQ Chicken

 BBQ Chicken on the Grill

Clean 3 Hindquarter of chicken,

Turn your gas grill on and get it hot, 350- 400 F.



Place the chicken on the grill and brown each side, watch it as it can burn. You just want it to brown the skin not cook the meat.



Sprinkle each with Lawry's Seasoned Sale and McCormick's SmokeHouse Maple


When the pieced are browned move to the foil pan, place back on to the grill and cook for 1 hour 350 F.

The last 10 minutes add Sweet Baby Ray's BBQ Sauce.


Serve with sauce on the side and green salad.
